Event Details: Wild About You Valentine's Dinner*

Salad Starter: Sweet Heart Rose-maine Wedge

• Half a romaine heart, candied pecans, bacon, bleu cheese crumbles, diced green apple, slivered red onion, balsamic reduction, tomato, bleu cheese dressing, edible rose petals.
• Vegetarian option available (no bacon).

Appetizer: Hot & Zesty Date

• Caramelized date, Spanish chorizo, shallot, citrus-zested chèvre, toasted baguette, micro firestix.
• Vegetarian option available (no chorizo).

Land & Sea Entrée Options

1. Grilled Top Sirloin

• Sirlion served with three seared sea scallops, red wine demi glace, clarified butter
• Served with sundried tomato pesto and parmesan fingerling potatoes

2. Beet Cured Salmon

• Fresh Atlantic salmon filet cured with beets, brown sugar, horseradish, pepper, and salt.
• Served on a spring mix with grapefruit, orange, and citrus vinaigrette.
• Served with sundried tomato pesto and parmesan fingerling potatoes

3. Penne Alla Vodka

• Penne pasta in a creamy tomato vodka sauce, topped with seared sea scallops.
• Vegetarian option available (no scallops).

Cheesecake to Share included with every entrée option

• Choice of plain, fresh berry coulis, caramel, or chocolate sauce.

Additional Information:
Guests will be shuttled from the front gates to Ray’s Plaza where they will enjoy an intimate dining experience inside the Fort Wayne Zoo Reef.
